Paul Clüver Wines is a 4th generation family business. The Clüvers have been farming in the beautiful cool-climate De Rust estate for over 120 years and are proud wine pioneers in the Elgin Valley. Their multi-award winning portfolio specialises in Chardonnay and Pinot Noir.

The estate forms part of the Kogelberg biosphere proclaimed in 1998 as the 1st biosphere in South Africa with UNESCO.

Paul Clüver Seven Flags Chardonnay

The Clüver family has been incredibly influential in establishing Elgin as one of SA’s finest Chardonnay and Pinot Noir regions. With Andries Burger’s passion, and the assistance of Burgundian consultant Martin Prieur, the flagship Seven Flags Chardonnay shows marked refinement, with grapes selected from the two oldest Chardonnay vineyards on the property, that are also the oldest vineyards in Elgin.

Paul Clüver Seven Flags Pinot Noir

Winemaker Andries Burger believes that the essence of a great Pinot Noir is the purity of fruit and balanced acidity which gives structure to the wine. The earmarked Seven Flags Pinot Noir barrels are tasted blind in conjunction with all the other Paul Clüver Pinot Noir barrels in the cellar. The best barrels of the site are then selected and blended to form this flagship Pinot Noir, with only 1300 cases produced.

Paul Clüver Sauvignon Blanc

Paul Clüver Sauvignon Blanc displays elegance, balance, expression of terroir and varietal typicity. A diversity of Sauvignon Blanc clones were used to provide a range of varietal flavors including tropical fruit, fig and citrus notes. Only the free run juice was fermented and time on fine lees added richness to the mid-palate. A small component of Semillon was added for breadth and body.

Paul Clüver Riesling

Influenced by altitude, slope, prevailing winds and sunlight interception, the cool Elgin terror leads to extended ripening period on the vine. The majority of the Riesling grapes come from a 33 year old Riesling block with shale rich soils, giving the wine a mineral core, great complexity and structure.

The 2020 vintage is the maiden release of the ripe and accessible Village Chardonnay. This wine is a blend of several components of Chardonnay grapes from Paul Clüver Wines. The wine remained on the lees for 7 months, ensuring complexity.

Paul Clüver Wines is a family owned and family run winery, well known for pioneering the Elgin appellation and for being a leader in sustainable farming. Focused on producing wines that reflect the uniqueness of the cool-climate Elgin terroir. The Estate Chardonnay is expressive, with subtler oaking, than the big brother, fuller bodied Seven Flags Chardonnay.

Paul Clüver Village Pinot Noir

For the Village Pinot noir, we select the vineyards which has not yet reach full maturity, young vineyards tend to show more varietal character which is what we want to express in this wine. Extensive individual berry sorting was done by hand prior to destemming without crushing. The whole berries were transferred to the fermentation tanks, which was followed by cold maceration. After cold maceration, the fermentation started spontaneously with some bathes inoculated with selected strains of Burgundian yeast. After the completion of the fermentation and pressing the wine was transferred to older French oak barrels and 5000 litre wooden vats for malolactic fermentation and maturation. The wine is matured in French oak for 10 months to add complexity and silkiness.

Paul Clüver Estate Pinot Noir

The focus at Paul Clüver is on producing world class wines that reflect the uniqueness of the Elgin valley, and more specifically of the estate. The ﬁrst Pinot Noir vines were planted in 1989 and the youngest blocks in 2015. Only Burgundian clones are used. After fermentation, the wine underwent malolactic fermentation in French oak barrels, before a further 12 months maturation in oak.

Paul Clüver Noble Late Harvest Riesling

Paul Clüver is nestled in an inland mountain plateau with close proximity to the ocean. The Riesling vines benefit from this cool climate and the grapes are left on the vines to ripen and botrytis is allowed to flourish. Meticulous sorting ensures only the best botrytis grapes are selected for this sumptuous dessert wine.
