Set at the foot of the mountain after which it is named, Saronsberg Wine Cellar is a contemporary addition to the rich heritage of Tulbagh valley, formed late in 2002 when Waveren and Welgegund, two farm portions of the historic Twee Jonge Gezellen Estate, were purchased and combined to create a unique location for this progressive winery. Saronsberg has rapidly established an impressive track record being highly acclaimed in South Africa and internationally with consistently awarded wines.

The grapes were hand-harvested at 04:00 and delivered to the cellar in 15 kg lug boxes before being chilled to 4°C. Once cooled, the fruit was destemmed, crushed, and gently pressed. The juice settled in tank for 24 hours before being racked to 500 L French oak barrels (second, third, and fourth fill) for fermentation. After completion, the barrels were topped and sulphured, and the wine remained on gross lees for seven months. The final blend comprises 80% barrel-fermented and matured wine, with the remaining 20% fermented and aged in stainless steel.
Prior to bottling, the wine was removed from barrel, crossflow filtered, and given a coarse sheet filtration on the bottling line. Bottling took place on 30 October 2025.
Saronsberg Lady at the Water Rosé
The grapes were hand-harvested at 04:00 and delivered to the cellar in 15 kg lug boxes before being chilled to 4°C. The fruit was destemmed and crushed, with
1-2 hours of skin contact allowed prior to separation. Only free-run juice was used to avoid extracting any harsh or bitter tannins. Fermentation took place in stainless-steel tanks at 16°C using selected yeast strains, lasting approximately two weeks. After fermentation, the wine was racked off the lees, sulphured, and prepared for bottling through crossflow filtration followed by a coarse sheet filter. Bottling occurred on 10 June 2025.
